As American as it gets.....


Guess where John McCain is, right this very minute? He's right here in my city, Grand Junction, Colorado. Actually, he and his family are on their way back to the airport now. I knew he was coming to Colorado today, but I didn't realize he was coming to where I live!

I'm feeling very patriotic today. I didn't say I'm comfortable with this election. Actually, I'm scared to death the wrong man may win. But I AM feeling patriotic, so I can't think of anything more appropriate than to share a new recipe I made Sunday evening. :-) And it's not apple pie. But I think it's very American.

I was craving tuna casserole. LOL

I've made it before, but always with one or another of the Campbell's soups every single tuna casserole recipe seems to call for. Yuck. So I did a little web search and I found a really, really good recipe.

This is the ultimate comfort food. And I think we could all use a little comforting today, as we wait for the outcome of this nasty, negative, never-ending election.



TUNA NOODLE CASSEROLE FROM SCRATCH
(from Allrecipes.com)



1/2 cup butter, divided
1 (8 ounce) package uncooked medium egg noodles
1/2 medium onion, finely chopped
1 stalk celery, finely chopped
1 clove garlic, minced
8 ounces button mushrooms, sliced
1/4 cup all-purpose flour
2 cups milk
salt and pepper to taste
2 (6 ounce) cans tuna, drained and flaked
1 cup frozen peas, thawed
3 tablespoons bread crumbs (I used Progresso Italian style)
2 tablespoons butter, melted
1 cup shredded Cheddar cheese

Preheat oven to 375* F (190 degrees C). Butter a medium baking dish with 1 tablespoon butter (I sprayed mine with Pam).

Bring a large pot of lightly salted water to a boil. Add egg noodles, cook for 8 to 10 minutes, until al dente (tender-firm), and drain.

Melt 1 tablespoon butter in a skillet over medium-low heat. Stir in the onion, celery, and garlic, and cook 5 minutes, until tender. Increase heat to medium-high, and mix in mushrooms. Continue to cook and stir 5 minutes, or until most of the liquid has evaporated.

Melt 4 tablespoons butter in a medium saucepan, and whisk in flour until smooth. Gradually whisk in milk, and continue cooking 5 minutes, until sauce is smooth and slightly thickened. Season with and salt and pepper. Stir in tuna, peas, mushroom mixture, and cooked noodles. Transfer to the baking dish. Melt remaining 2 tablespoons butter in a small bowl, mix with bread crumbs, and sprinkle over the casserole. Top with cheese.

Bake 25 minutes in the preheated oven, or until bubbly and lightly browned.


So this is actually easy. Really, instead of using soup, you're making your own white sauce. And the sauteed vegetables really perk up what could easily be a very boring dish.

We loved it! And it's pretty easy on the food budget, too. :-)

That sounds really good, and I don't even like tuna casserole. I think it's the real white sauce & veggies vs. the canned soup that does it for me.

Now if only I had the energy to fix it. :)

Gosh, I haven't had tuna casserole in eons! I don't even know if I've ever made one in my married life (well over a decade!). My college roommate had one she taught me to make, but I haven't done that one in years. I honestly can't even remember if it had cream of x soup :) This sounds good, thanks for sharing Barb!

I made this tonight, with the following changes: I stirred a 1/4lb. of velveeta into the white sauce and topped it with crushed potato chips instead of bread crumbs. It was excellent. My 8 year old keeps telling me I have to make it often, he really liked it.
