A couple of weeks ago when I asked for your input regarding my delicious but flat chocolate chip cookies, I was amazed how many of you suggested the same two things...use shortening instead of butter and increase the flour in the recipe. Like most people, I've always used the recipe on the bag of chocolate chips. And it just wasn't working for me.
Becky at The Butler's Wife sent me her husband's recipe. Yes, her husband...The Butler. Apparently at one time her husband owned a pastry shop and this was his own personal recipe for his highly successful chocolate chip cookies.

THE FAT CHOCOLATE CHIP COOKIE !!!
My mother-in-law made wonderful chocolate chip cookies.
Dinner guests were actually caught leaving her house with their coat pockets stuffed full of her cookies. Seriously. LOL
We lived in a small town (population 800 people) and every kid in town loved her chocolate chip cookies. It bugged the living daylights out of me that hers were huge and puffy and no matter what I did, mine looked like pancakes.
So it made my day last Sunday when I made The Butler's recipe and like magic, mine turned out like hers.
The moment I saw his recipe, I realized he uses a combination of butter and shortening and he uses a lot more flour than the recipe on the bag calls for.
So you were all right - that was the secret!
Sharing this with you seems like a good start to the new year.
1 stick butter, softened but not melted
1/2 cup shortening
1 cup granulated sugar
1 cup brown sugar, packed
2 eggs
2 tablespoons (yes, tablespoons) vanilla
3 1/4 cups flour (a full cup more than the recipe on the package calls for)
1 teaspoon baking soda
1 teaspoon salt
1 12-ounce package semi-sweet chocolate chips
Preheat oven to 375*
Mix thoroughly butter, shortening, sugars, eggs and vanilla with a wooden spoon. Stir in remaining ingredients.
The batter will be stiff, and it should be. Just to make sure it is flavorful, you should try some of the dough. But not too much!
Drop dough by rounded teaspoonfuls 2 inches apart on an ungreased baking sheet (preferably a shiny sheet which gives better results).
Bake 8 to 10 minutes or until light brown. Cool slightly before removing to a wire rack.
Yield: about 5 dozen normal sized cookies or 3 1/2 dozen ginormous cookies.
Nutritional information: Please! This is chocolate chip cookies. Who cares?

Ooh those look good! I think maybe my mom used shortening too but it's something I quit using years ago. I love chocolate chip cookies though.

The lady across the street brought us PB and Chocolate Chip cookies when we moved in and they were fluffy and the best cookies I had ever tasted...I have been meaning to ask her for the recipe.....these you have baked look down right awesome...I'm book marking them for a day when Madison is home.

Oh, wow! These look delicious! My daughter is an excellent cookie maker, and I've already printed this off for her to make. Her brother has some college roommates that will probably be appreciative, too! ;)
How dare you show those yummy cookies when the rest of us are starting our New Years diets? They sure do look good :) My diet isn't going so hot anyway. Your cookies look delicious!!! I can't wait to try this recipe. I always have flat cookies like your picture. And they always seem a little heavy or kind of like they didn't get all the way done. And if I just cook them longer the are too crunchy.

YEAH! I have had this problem since moving over a mile high.... 5400 ft approximately. I even tried the high altitude recipe but to know avail. It did work with brownies though so I am definitely trying these!! Whoohoo! Thank you!!

Your paper whites are pretty. I still remember them in my honey moon bedroom 25 yrs ago. Mine did not smell so nice though. We awoke to them blooming over night. The fragrance was over powering.

I made them on Wednesday and gave the son who was returning to college about 15 to take with him. I put a dozen in the freezer and the rest in the cookie jar(not nearly as big as yours!). They are all gone. Even the ones in the freezer.
I used less sugar (I always do). I buy my chips in bulk, so I used 2 cups. They were so good.
Well now I know what I'm making for dinner tonight! Who needs any other food group? OH, yum.

Any ideas if butter should be salted or unsalted? I used unsalted over the holidays and my cookies were not only flat but pratically running off the tray (in a liquid gooey way, not the marathon kind of way:) Maybe I got the flour wrong. They ended up square since I had to slice them apart after the cookies ran into each other. Thanks.
