APPLE CAKE

On Sunday I mentioned that Jules at Everyday Mommy recently sent me a recipe with this message: "I warn you, it is dangerous. Bake at your own risk." Jules has the most amazing knack of looking at a new recipe and knowing it's going to be delicious. She hasn't steered me wrong yet.

The minute I read this recipe, I knew I was making this Paula Deen cake. I made it Sunday afternoon. I'm telling you, this cake is decadently wonderful, just as Jules said it was. So for those of you who asked me to share:



PAULA DEEN'S APPLE CAKE



Cake:
Butter, for greasing pan
2 cups sugar
3 eggs
1 1/2 cups vegetable oil
1/4 cup orange juice
3 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon ground cinnamon
1 tablespoon vanilla extract
3 cups peeled and finely chopped apples
1 cup shredded coconut
1 cup chopped pecans

Sauce:
1/2 cup (1 stick) butter
1 cup sugar
1/2 cup buttermilk
1/2 teaspoon baking soda

Preheat the oven to 325 degrees F. Generously grease a tube or bundt pan.

For the cake: In a large bowl, combine the sugar, eggs, oil, orange juice, flour, baking soda, salt, cinnamon and vanilla extract; and mix well. Fold apples, coconut, and pecans into batter.

Pour the batter into the prepared pan and bake until a tester comes out clean, about 1 1/2 hours.

Shortly before the cake is done, make the sauce: Melt the butter in a large saucepan, stir in the sugar, buttermilk, and baking soda, and bring to a good rolling boil, stirring constantly. Boil for 1 minute. Poke holes in the cake. Pour the sauce over the hot cake IN THE PAN as soon as you remove it from the oven. Let stand 1 hour, then turn out onto a rack to cool completely.



These are the only ingredients you might not have on hand. Actually, I usually have apples and orange juice and this time I even had the coconut. Let me tell you, I do NOT normally have buttermilk on hand. Blech. But it's wonderful to cook with. By the way, it only took three of these apples to make 3 cups. But they were fairly large apples.




Get serious when you butter your pan. This cakes really wants to stick to the pan.




I used the usual method of baking to combine the ingredients. I combined the dry ingredients in a separate bowl before I added them to the sugar and wet ingredients.




Look at this wonderfulness! The apples, pecans and coconut are what make this cake to die for.




Be sure you use a large sauce pan to boil the sauce. It really bubbles up. (That's my beef stew in the pot behind it. :-)




Poke a lot of holes all throughout the cake. I used a picker from my nutcracking set. It made nice, big holes and went all the way to the bottom of the cake. A toothpick wouldn't do that because this cake really rises.




You can see that I almost scorched the sauce. Take the "stir constantly" directions seriously. Pour all the sauce on the cake even if it seems like too much. This is a very, very moist cake.




I honestly don't know how to describe how delicious this cake is. The apples make it very moist, as does the sauce, which is almost like a glaze on the outside of the cake and just wonderful on the inside. Rob took one bite of this and said, "You DO plan to make this often, right?" He's having beef stew for dinner tonight. I'm having cake. :-)



ONE QUICK NOTE: So many of you have emailed me and asked me how Rob's doing and how his first physical therapy appointment went today. It's been three weeks today since the surgery so the therapist wasn't too rough with him. He still has to wear the sling. I'm going with him for his next appointment Thursday so the therapist can teach me how to help him with the exercises he has to do at home.

He's doing very, very well but the poor man is just bored to death. He does read a lot and I even let him watch his old black and white John Wayne movies as much as he wants to (or The History Channel). He's not sleeping really well at night because of the sling. But all in all, we're comfortable with his progress.

Aside from the fact that the cake looks absolutely scrumptious - I love all the pictures. It's just like watching it on tv. Great job Barb!!! Glad to hear things are progressing for Rob. I know he'll be glad when that sling is a thing of the past.

Given my track record in the kitchen, I am content to simply look at the gorgeous pictures of YOUR Apple Cake!
Will be praying for some restful nights for Rob. As for the boredom, I don't know. Movies only keep you occupied so long - even John Wayne! Maybe you could clothe yourself in Saran wrap and do a little dance? :) Just a thought.

If it wasn't 10:15 PM, I'd be making that cake right now. It sounds YUMMY! Glad to hear Rob's progress is on track. Wish I had some hobby suggestions to help with the boredom, but he doesn't look like the scrapbooking type. Hope you have a wonderful evening:)

I would so make that cake if it weren't for the coconut. Unfortunately, no one in this house (most notably, the baker, moi!) likes coconut. But otherwise it does look delicious, love all of the pictures!

So glad that Rob is doing well and I know he must be going totally nutso with all of this. It's just going to keep getting better though and I hope he's out of that sling soon. Poor thing, be sure to keep us updated on how both of you are doing :)

Glad Rob is doing well -- bless his heart. That sling looks like a torture device to me, so I hope he's out of it as soon as possible.

Okay - I WILL be making this this weekend, and we're going to call it dessert, then breakfast, then dessert again. You know I adore coconut. Then I think it's adorable that Rob must have taken your photos - very sweet of him, and you are SKINNY, good grief! And then the photo you took of him asleep - I hate seeing him banged up - can't wait to see him up and around and swinging a golf club again. I hate being bored, so I feel for him. I am making this cake - sounds fabulous!

Well, I may have to try this cake. It sounds incredible, except for the coconut. Can I leave that out? I reeeaaaally don't like coconut.

I can so totally sympathize with Rob and the sling. I had elbow surgery about 3 years ago and was in a CAST from my upper arm down to where my fingers connect to my hand for three very long weeks. It was so awful and I learned a whole new art in sleeping. Thank goodness it was my left elbow because I'm righthanded.

Poor Rob! If anything, it should be rather entertaining to watch you do all that play-by-play photot baking and cooking! It's so impressive!

But I have to say, the photo with you pouring the sauce out of the pot... I always shy away from boiling anything like that because of the burning that happens at the bottom of the pot. I see it happens to you too! I guess it doesn't matter?

And yes, Barb, I probably do sound like I just crawled from out of a cave. I am a self-taught woman, and my momma didn't show me much in life.

That cake looks moist and succulent, and I'll bet it's better the next day, too, after all that yummy glaze soaks into it.

Hey Barb,
I am so making this cake but I have to buy a bundt pan it is the only kitchen item I dont own. I have a recipe I am dying to share. It is called sopapilla cheesecake made with crescants and it is to die for as well.
I am going to find a bundt cake pan tomorrow. What else can I use to make the holes? Any ideas?

Okay, now my mouth is absolutely wtering for that cake and there is nothing in the house that will make any kind of quick substitute that will satisfy. Love your photos. Your gonna end up writing a cookbook, I just know it and I want the first autographed copy!

I can't imagine how hard it is just sitting around for Rob. I hope he is out of that sling soon!

This cake looks sooo good! I'm glad it's so late so that I'm not tempted to make it right now. As if that cake wasn't enough, those cookies look yummy too. Peanut butter??? I sure was hoping that Rob was sleeping better now that he's able to sleep in his own bed. I hope he gets some great sleep really soon. That photo is absolutely priceless.


I love the lines of that vase next to Rob. What are you displaying in it?

Now there's a very great idea, a cook book, with each step pictured. People would love your instructions making so much sense, details other books leave out.

I think what Rob needs is an outing away from the house. Tell him I'm still praying. How nice the lady in Pennsylvania sent books.

I sure miss you. What's this about getting more skinny? You're slim enough.

I am TRYING to lose weight! But that cake looks scrumptious. I am with some others that have posted though, I am not a fan of coconut. I wonder how life changing it would be to leave it out?

On Rob, I say you run a "contest" for Let's Entertain Rob and have us post entertaining thoughts or ideas for Rob to muddle through. I mean what man doesn't want to read the advice of a bunch of blogging women! Should be a perfect day of reading for him - LOL!

Wow! This cake looks great! My mom is a huge fan of Paula Deen and raves about her gooey butter cakes. I've never tried one, but I'll have to try this apple one out. I only wish I'd had the recipe back in October when I had a 1/2 bushel of apples sitting in my kitchen! Oh well, there's always this year.

Diane, yes, peanut butter cookies. Rob and Cameron eat so many of them, I made a double batch every Saturday. This time I made them "Cameron size." They fit perfectly right into his little hands and Chelsea gets smaller doses of people food when Cameron shares with her.

Pea, I wondered if you were taking medication to help with the anxiety and agarophobia. (sp) I'm glad. No fun being afraid to leave the house.

Deanna, I cringed when you said haybaler. Oh my word.

Cori, Pottery Barn puts all their big heavy glass vases on half price from time to time. I bought that big vase specifically to house a betta, which was such a mess, I plopped that little fish right into the big aquarium and recovered my vase. It has pine cones in it now. They remind me of my Texas roots.

And to everyone else, I suppose you could leave the coconut out but it wouldn't be the same. I can't think of a substitution. Maybe a couple of pounds of chocolate chips? Hmmmm? Talk about a gooey cake!

I have a great apple cake recipe that I make, but I'm always open to try new ones! This looks absolutely marvelous! I will definitely be trying it (but will have to wait until I can take it somewhere to share - we try to stay away from the sweets at our house!).

I've made this cake a few times and came back to get the recipe (after I lost it again). I was reading through the comments and realized how many people don't like coconut- myself included. I jsut leave it out and the cake is still to die for. I think it tastes better without it! But, just my opinion. This cake is the best cake I've ever had and I am making it tomorrow again!

You must also try the Southern Living (cooking website) Fresh Apple Cake that also includes several different icings and glaze recipes depending on your preference. I fixed it in a 9x12 pan but a bundt could work too. Everyone loved it and had seconds and thirds. I used a cream cheese with toasted pecans icing; also includes a chocolate, a burnt butter, like a caramel, and streusel to fix for breakfast. It is awesome; it is in the FRONT of my file now. Oh and use the Granny Smith apples as in the recipe because that is what makes it taste flavorful; any others will be a bland cake.
