I made a ridiculously easy and totally delicious dinner last night. You know how you see those rotisserie roasted chickens at your grocery store? Sometimes they're somewhere in the middle of the store in a warmer. You can almost always find them in the deli, too. I see them all the time and I've never once bought one. Weird.
This was the "Fake It, Don't Make It" recipe in the August issue of Real Simple Magazine and was in my "must try" file. Last night was a little nuts. I didn't even get home from grocery shopping until after 7 so I tried this.
I just bought two rotisserie roasted chickens, a bottle of barbecue sauce (didn't have any of Jules' on hand and didn't have time to make it but hers is sure better than store bought), a small can of chopped jalapenos and Kaiser rolls.
All you have to do is tear the meat off the chickens (four pounds of chicken should make five or six cups), put them in a saucepan with two cups of barbecue sauce, heat it up and serve it on the Kaiser buns (which I toasted under the broiler so the sandwiches wouldn't get soggy). The jalapenos are optional of course but they really did add some zip to these sandwiches.
Talk about fast and easy! And they were really good. Just ask Rob and my mom. And can I just say I wish you could smell the big pot of homemade chicken noodle soup simmering on my stove right now? OK. Enough about food. :-)
