I made a ridiculously easy and totally delicious dinner last night. You know how you see those rotisserie roasted chickens at your grocery store? Sometimes they're somewhere in the middle of the store in a warmer. You can almost always find them in the deli, too. I see them all the time and I've never once bought one. Weird.
This was the "Fake It, Don't Make It" recipe in the August issue of Real Simple Magazine and was in my "must try" file. Last night was a little nuts. I didn't even get home from grocery shopping until after 7 so I tried this.
I just bought two rotisserie roasted chickens, a bottle of barbecue sauce (didn't have any of Jules' on hand and didn't have time to make it but hers is sure better than store bought), a small can of chopped jalapenos and Kaiser rolls.
All you have to do is tear the meat off the chickens (four pounds of chicken should make five or six cups), put them in a saucepan with two cups of barbecue sauce, heat it up and serve it on the Kaiser buns (which I toasted under the broiler so the sandwiches wouldn't get soggy). The jalapenos are optional of course but they really did add some zip to these sandwiches.
Talk about fast and easy! And they were really good. Just ask Rob and my mom. And can I just say I wish you could smell the big pot of homemade chicken noodle soup simmering on my stove right now? OK. Enough about food. :-)

You know I just discovered those chickens too. Not that I never saw them, but I never bothered to buy. Bought my first last month and thought what was I thinking waiting this long. I was the same price if not cheaper than the meat isle uncooked ones and yummy and tender and cooked! I am so trying this out as a different way of having it.
Hi, Barb. Did you find the info on Cavender's Seasoning? We use it on A LOT of stuff, most especially when grilling. Just love the flavor.
This sounds yummy. I love rotisserie chicken and I have seen some cookebooks on using rotisserie chicken but I have never actually tried to use it in another way besides just cutting it up. I am definitaly going to try this one. At Sams they have 2 chickens for about $8.00 and this would feed my big family. Thanks for the idea.
MMMMM...I think I do smell that soup. My favoite soup in all the world is chicken noodle soup. The sandwiches sound really good too. You are definitely a great cook Barb.
Wafting right into my kitchen window...I adore chicken soup and there a millions of ways to do it but only one memory...mom's way.

And this is a great idea about the BBQ chicken sandwich! I was just craving it from KFC, but I don't find it satisfying enough and often pass up the idea! But this is a great new way to do a meal with the rotisserie chickens!
The other ways I eat rotisserie are in quesadillas, or chinese chicken salad or on the side with baked a potato, or chicken salad sandwiches. So many options, I'm definitelt trying the BBQ sauce idea.
I have bought the rotisserie chicken (hubby likes it) but it never occurred to me to serve it any other way. Thanks for sharing this! My family will be impressed.

Be right over, did someone say soup!!!!!!!! I go to the Dr next Tuesday. I am only wearing ortho bands (one on each side) like the bands Chelsea wears =))
I have found I can eat Tuna salad, it is pretty creamy.
I have been so good though, I have made my family a NICE dinner each day this week. And tonight is roast. This is a big deal for me, I was a lazy cooker.
The barbeque sandwiches sound yummy. I don't know how you make such delicious meals all the time and stay so small. I guess it is running around after that cutey pie Cameron. Have a great weekend!
Okay..enough with the food I'm starving now.....and I havent had any lunch.
When you walk in the Kroger up here it is the first smell that hits you right in the face and do they smell good. We use to buy them all the time but then got a rotisserie cooker for Christmas 2 years ago, now we cook them quite often and they make the house smell sooooo good. Jerry's mom told us about cutting them up and making barbecue sandwiches about a year ago but she doesn't use the jalapenos which sounds really good for some extra snap to the sandwiches. I just love soup of almost any kind. I bet your house always smells good with the cooking you do.

This sounds sooo good. I can't have the roll, but chicken and bbq sauce is on my plan, so we are going to have to try this. I'm always up for easy-peasy things to fix

I Love toasted buns on burgers and sandwiches. But, every time I try to do it in the oven, on the broiler or the grill, they either burn, get too dry or hard as rocks.
What the heck am I doing wrong?
