TACO CASSEROLE


I mentioned yesterday in my Sunday meanderings that I was making taco casserole for Sunday dinner. Several people emailed me asking for my recipe. So here you go!



1 lb. ground beef
1/2 cup chopped onion
1 8-oz. bottle taco sauce, any flavor
3/4 cup water
1 4-oz. can diced green chiles
1 pkg. taco seasoning mix
broken tortilla chips
2 cups shredded Cheddar cheese

Garnishes: shredded lettuce, diced tomatoes, sliced black olives, diced green onion, diced avocado and sour cream

Preheat oven to 375* Spray an 11 X 17-inch baking dish with Pam.

Cook beef and onion in a large skillet until beef is browned; drain. Stir in taco sauce, water, chiles and taco seasoning mix; bring to a boil.

Reduce heat to low; cook, stirring occasionally, for 3 to 4 minutes.

Cover bottom of baking dish with a layer of tortilla chips. Cover with half the meat mixture. Sprinkle with one cup cheese. Repeat with remaining ingredients.

Bake for 20 to 25 minutes. Just before serving place unbroken tortilla chips all over the top. Serve with garnishes.



That photo up there is all pretty and gorgeous. I don't have food artists to do touchup work on my kitchen masterpieces so this is what it looks like when I make it. My husband didn't even bother to ask me why I was taking a picture of dinner last night. Can you believe that?

Yummmm that sure looks good...I copied down the recipe of course! Geez, you sure gave me a lot to read but...I enjoyed every single post I had missed while I was gone:-) Love reading your posts, Barb, one can always tell they come straight from the heart. You know my kids absolutely LOVE mexican food and I'll bet if I fixed this and they loved it we would not have to eat out mexican night anymore. So with further ado I am making this for supper tommorrow night and see what happens. It really looks yummy and my son loves nachos.

Looks and sounds delish! I like Michelle's suggestion to add a layer of refried beans. Homemade tacos are my favorite dish to make, and I bet this is even better.

I didn't know you Colorado gals knew how to make Mexican food. No offense of course, but every time we try a Mexican food restaurant in CO it is definitely different than here in South Texas. You did great! I can see the guacamole-yummy-my favorite.

A true blogger's husband he is! Digital cameras make us a bit dangerous..... I can attest this is wonderful - I fed our kids this for years and years and they still request it when they come home. Easy, great for entertaining, football games. xoxo

I'm going grocery shopping today and just put all these ingredients on my list - I'm making it this week! Oh, and your cheesy chicken and broccoli was a BIG hit here last week! I'm so glad you post recipes - they're always easy and yummy. Keep it up!

Also, my guys have stopped asking why I get the camera out over every little thing. They know it's "just in case" I get the perfect picture for my blog. :)

It's 9 a.m. and now I'm hungry for Mexican food (actually, Tex-Mex). Thanks. I'm also thinking of my mom's homemade enchiladas, which she prepares the day after making her homemade chili. She makes enough chili to use the leftovers in the enchiladas. Mmmmmm.

Aunt Barb, I remember visiting you and D. back with Mom and Ed when I was, what, 2? And you'd made taco salad. Other than the olives, which I still can't stand, I was in love--obviously, since I remember a meal from when I was a toddler! It's on my menu plan at least once a month, and it's your recipe! Just letting you know...we tried this tonight and it was great and easy.
